Argentine Favorites: Dulce de Leche (Milk Caramel)

One day back after about a month in Argentina and I’m already in withdrawl from a constant influx of dulce de leche.  In addition to eating this delicious soft caramel straight (using a fork according to the etiquette of my in-laws), I came across it in cakes, on toast for breakfast, drizzled over dulce de leche mousse, absorbing all my wilpower in home delivery ice cream… (try Volta)…and filling all sorts of wonderful little treats such as alfajores, traditional Argentine cookies filled with dulce de deliciousness.  Below are photos of my highlights from various sites across the city of Buenos Aires.

Inspired? There are a number of recipes, ranging from shortcut-tastic (simmer a can of sweetened condensed milk…very carefully as I’ve heard stories of dulce de leche ending up on the ceiling) to medium intensive (using sweetened condensed milk) to making it from scratch (sugar, milk, magic, etc.)
